Ingredients

The ingredients are:
  • 1 (15 ounce) can black eyed peas (not drained or rinsed)
  • 3 slices bacon, diced
  • 6 to 8 cherry tomatoes, cut in half
  • 1 small onion, diced
  • 1 large garlic clove, minced
  • 1 jalapeno, seeds and ribs removed, minced
  • Chicken broth (optional, only if needed)
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Base ... Add the bacon to a non stick saute pan on medium heat. Slowly cook the bacon until it starts to render it's fat and starts to crisp up. When the bacon is almost done, add the onion, garlic, jalapeno, tomatoes, and peas. Stir well to combine. Season lightly with salt and pepper and mix well.

  • Step 2: Bring to a light boil; then, reduce to a simmer, medium low to low heat. Cook for 10-15 minutes; as the tomatoes will start to break down and release their juice. Cook until the peas and sauce naturally thicken. If you like a little more
