Step 1: Sauce ... Mix all the ingredients together and set to the side, or refrigerate until ready to use. I use a whole teaspoon of chipotles, but use as much as you like, according to how spicy you like it.
Step 2: Sandwich ... Slice the rolls in half and lay out on a sheet pan, cut side up. Broil just a minute or less, until slightly toasted. You can skip this step; but, I really think it prevents the sandwich from getting soggy before it is baked - especially if making ahead. You DON'T want to bake them; you ONLY want to toast the cut side slightly.
Step 3: Then, after the rolls have cooled, slather each toasted side with a little of the sauce. Top the bottom half with 2 slices of roast beef, a couple of onion slices, 3 pickles, a slice of cheese; and, finish with the top roll. Wrap in foil. At this point, you can bake them immediately, or refrigerate until later.
Step 4: Bake ... Preheat the oven to 375 degrees. Lay the wrapped sandwiches on a baking sheet and bake 5 minutes minutes on the middle shelf; then flip the sandwiches over. Bake another 3-5 minutes until the cheese is melted. You don't want the sandwiches to burn, so don't cook them more than 10 minutes. I usually check them when I turn them over; this gives me a good idea how much longer they will take. NOTE: If you made these ahead, and they have been refrigerated; set them out on the counter to warm up a bit (15-20 minutes), so they aren't ICE COLD when you put them in the oven.
Step 5: Serve and ENJOY! ... Serve the warm wrapped sandwiches on a big platter and dig in. Perfect for a day watching the game, a card/game/or movie night with friends; or just something easy for a family weeknight dinner. They certainly aren't gourmet; but they are always the first to go - which is a good thing.
