Step 1: Preheat oven to 400 degrees F. Hollow out the sourdough loaf.
Step 2: Pour oil into a large skillet and set over medium heat. Cook mushrooms, bell pepper, celery, and onion in hot oil for about 10 minutes, until softened.
Step 3: Spread the mayonnaise into both sides of the bread loaf. Sprinkle with Italian seasoning and pepper.
Step 4: Arrange 1/2 pound ham in the bottom half of the loaf. Top with 1/2 cup Colby Jack and 1/4 cup mozzarella cheese, then half of the cooked vegetables. Repeat layers. Replace the top of the loaf, then wrap in foil.
Step 5: Bake for about 30 minutes, until sandwich is hot through and through. Slice and serve.
