Ingredients

The ingredients are:
  • 1 1/2 cup vegetable oil (can use 3/4 cup of applesauce and 3/4 cup oil instead of the 1 1/2 cup of oil, it will still be great)
  • 2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 2 teaspoons ground cinnamont
  • 1 (14 ounce) can crushed pineapple, slightly drained, you need some of the juice for the moistness in the cake.
  • 2 large carrots, finely shredded

How to Make

  • Step 1: Preheat oven to 350 degrees. Grease and flour a 9 X 13 baking pan.

  • Step 2: Mix first 4 ingredients together and beat for approximately two minutes. Blend the next 4 dry ingredients together; Add to egg mixture, beat until combined. Using a large spoon mix in the crushed pineapple until combined.

  • Step 3: Pour into pan and bake for 40-45 minutes or until a toothpick inserted in center comes out clean. Let cool thoroughly before frosting.
