Ingredients

The ingredients are:
  • 2 1/2 cups vegetables (mixed vegetables chopped, such as broccli, peppers, onions, mushrooms, your choice)
  • 2 jalapeno peppers, finely chopped
  • 1 teaspoon veggie oil
  • 2 cups frozen hash browns
  • 2 teaspoons dijon mustard
  • 6 eggs
  • 2 teaspoon dijon mustard
  • 2 tablespoons water
  • 1 cup shredded cheese (Kraft 4 cheese Italiano shredded cheese)
  • Salt and pepper to taste

How to Make

  • Step 1: Preheat broiler

  • Step 2: Using a 10" ovenproof skillet pan heat the oil and cook the veggies, hash browns and jalapeno over medium heat for 10-12 minutes. Stir frequently

  • Step 3: Mix the eggs with water and dijon mustard, pour mixture over the veggies, cook until almost set. Season with salt & pepper.

  • Step 4: Sprinkle on the cheese and broil for 5 minutes or until the cheese has melted and it is golden on top. Serve and enjoy
