Step 1: Beat cream cheese and mint extract. Add 2 cups of the powdered sugar and beat in. Add 1 more c of powdered sugar and knead in by hand. Roll into marble-sized balls and flatten with fork. Or you could roll it out on a flat surface dusted with powdered sugar and powdered sugar dusted on top. Then cut it with a pizza cutter into little squares. Place on waxed paper. Let set overnight.
