Ingredients

The ingredients are:
  • 1/2 cup chickpea flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup warm water
  • 1 1/2 tablespoons olive oil
  • 1/2 medium onion, sliced
  • 1/2 tablespoon fresh rosemary leaves, minced or 1 teaspoon dried.

How to Make

  • Step 1: Mix together all ingredients except 1/2 tbsp olive oil and onion. Stir together well and then let sit at room temperature for about 25 minutes.

  • Step 2: You will need a small cast iron skillet about 7 inches diameter. About 15 minutes before the batter is ready, preheat the cast iron skillet in the oven at 450 degrees.

  • Step 3: Carefully remove the heated skillet from the oven and put in the remaining oil. Swirl it around in the pan then pour in the batter and return the pan to the oven. Bake for 12 to 15 minutes until browned on the edges. Eat with toppings like a pizza or have it with soup or salad.
