  • 4 tortillas, flour (burrito-size)
  • 2 cups monterey jack cheese, grated (packed about 1/4 pound)
  • 1 1/2 to 2 cups broccoli (cooked, chopped, room temperature)
  • Garlic, onion powder, pepper (to taste)
  • Salsa (optional)

How to Make

  • Step 1: Preheat griddle or heavy skillet over medium heat for 3 minutes. Add a flour tortilla or two and sprinkle each with about 1/2 cup cheese.

  • Step 2: Divide broccoli (about 1 cup per quesadilla) between tortillas, sprinkling it over the cheese, then divide remaining cheese over broccoli. Sprinkle with seasonings. Top with salsa, if desired.

  • Step 3: Top each tortilla with a second tortilla and cook for several minutes, until bottom of lower tortilla is light gold.

  • Step 4: Flip quesadilla over and cook on second side until bottom is golden. Cheese should be completely melted. Remove from pan and slice into wedges. Serve hot or warm. Cut into smaller wedges for appetizers.
