Ingredients

The ingredients are:
  • 1 cup all-purpose flour
  • 1/4 cup cornmeal (yellow)
  • 1 1/2 teaspoons baking powder
  • 1 seasoned salt (or white salt)
  • 1 teaspoon Cajun seasoning (or Creole seasoning, purchased or homemade, see my recipe ---http://www.recipezazz.com/recipe/best-creolecajun-seasoning-mix
  • 1/2 teaspoon fresh ground black pepper, or to taste
  • 3 tablespoons granulated sugar
  • 1 large egg (lightly beaten)
  • 1/2 cup milk (may need a little more)
  • 3 tablespoons lard (melted lard or melted shortening)
  • 1 can (12 ounce) whole kernel corn (drained and coarsely chopped, use your food processor for chopping)
  • Oil, for frying

How to Make

  • Step 1: Pour oil into a deep heavy skillet to about 1-1/2 inches or a little more, then heat over medium-high heat.

  • Step 2: In a bowl combine flour, cornmeal, baking powder, seasoned salt, black pepper and Cajun seasoning.

  • Step 3: In another bowl whisk egg with milk and melted lard or shortening until smooth and combined; add to the flour mixture and mix until just blended adding in a little more milk if the mixture seems to dry.

  • Step 4: Mix in corn kernels.

  • Step 5: Drop by heaping teaspoonfuls into hot oil.

  • Step 6: Fry until golden turning once (watch closely these take very little time to brown).

  • Step 7: Remove with a slotted spoon and drain on a rack or paper towels.
