Step 1: Boil linguine in a large pot of water until tender (al dente). Drain and rinse with cold water. Place linguine in a large bowl.Add chicken, carrots, green onions and bellpepper strips
Step 2: While pasta is cooking in a food processor or blend blend the peanut butter, soy sauce, rice vinegar, chili garlic sauce, sugar, ginger and broth until smooth.
Step 3: Pour peanut sauce over the pasta veggie mixture and toss well to coat. If sauce is too thick, thin with extra broth or a little water. Add salt and pepper. Serve right away or chill.
