Step 1: Preheat oven to 400 degrees F. Line a baking sheet with foil and coat with nonstick cooking spray.
Step 2: In a large bowl, stir the egg, ketchup, onion, bread crumbs, garlic, salt, and pepper together. Gently mix in the ground beef.
Step 3: Divide the beef mixture into 16 equal mounds and flatten slightly. Place 1 piece of cheese onto the mound. Firmly wrap each piece of meat around a cheese cube. Place stuffed meatballs on the baking sheet.
Step 4: Bake for 20 to 25 minutes, until meat is no longer pink, turning the meatballs over after about 10 minutes.
