Ingredients

The ingredients are:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup confectioners sugar
  • 3/4 cup butter (cold)
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup lemon juice (I used the juice of 2 lemons and then bottled to make 1/2 cup)
  • 1 teaspoon baking powder
  • 3/4 to 1 cup sweetened flaked coconut

How to Make

  • Step 1: I made the crust in a food processor, the following is for making by hand. In a small bowl, combine flour and confectioners' sugar; cut in the butter until crumbly. Press into a lightly greased 13x9 inch baking pan. Bake at 350 degrees for 15 minutes.

  • Step 2: Meanwhile, in another small bowl, beat the eggs, sugar, lemon juice and baking powder until combined. Pour over crust; sprinkle with coconut.

  • Step 3: Bake at 350 degrees for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into squares.
