Step 1: Boil water and cook pasta as directed on package, until al dente. When pasta is done, drain well, return to pot, then add sliced chicken pieces, and set aside.
Step 2: Meanwhile, heat garlic, oil, lemon juice, and red pepper flakes over low heat for about 10 minutes. When a few minutes remain, add grated Parmesan cheese, and stir as it melts.
Step 3: When cheese is melted, remove from heat, and fold spinach into sauce until wilted.
Step 4: Toss pasta and chicken with sauce, and top with lemon zest and grated Parmesan cheese.
Step 5: Serve.
