  • 1 pound boneless skinless chicken breast (baked and sliced)
  • 4 garlic cloves, minced
  • 3 tablespoons oil (olive oil)
  • 2 lemons, juiced
  • 1 lemon, zested
  • 1 teaspoon red pepper flakes
  • 1 cup Parmesan cheese, grated (plus some cheese to top pasta before serving)
  • 1 cup fresh spinach leaves

How to Make

  • Step 1: Boil water and cook pasta as directed on package, until al dente. When pasta is done, drain well, return to pot, then add sliced chicken pieces, and set aside.

  • Step 2: Meanwhile, heat garlic, oil, lemon juice, and red pepper flakes over low heat for about 10 minutes. When a few minutes remain, add grated Parmesan cheese, and stir as it melts.

  • Step 3: When cheese is melted, remove from heat, and fold spinach into sauce until wilted.

  • Step 4: Toss pasta and chicken with sauce, and top with lemon zest and grated Parmesan cheese.

  • Step 5: Serve.
