Ingredients

The ingredients are:
  • 1 pound ground beef
  • 1/2 ounce taco seasoning mix (half of a 1 ounce packet)
  • 2 cups salsa (or Picante sauce, mild or medium)
  • 1 can (16 ounce) black beans (drained)
  • Salt and pepper, to taste
  • 2 cups crushed tortilla chips (coarsely crushed, can a little more or can use flour or corn tortillas instead of crushed tortilla chips)
  • 2 cups sour cream
  • 1 can (2 ounce) sliced black olives (drained)
  • 1 to 2 green onions, chopped
  • 1 plum tomato (chopped)
  • 2 cups shredded cheese (Mexi blend shredded cheese or cheddar cheese)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Grease a 11 x 7-inch baking dish.

  • Step 2: In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in taco mix and salsa; reduce heat and simmer uncovered over medium-high heat for about 20-25 minutes. Stir in black beans; heat through, then season with salt and pepper to taste.

  • TO ASSEMBLE

  • Step 3: Spread crushed tortilla chips in bottom of baking dish, then spoon beef mixture over chips. Spread sour cream over beef, then sprinkle olives, green onion and chopped tomato. Top with shredded cheese.

  • Step 4: Bake in preheated oven for 30 minutes, or until hot and bubbly.
