Ingredients

The ingredients are:
  • 1 cup large green pitted olives
  • 1 cup large black pitted olives
  • 1/4 cup vodka
  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary (or a mix of fresh rosemary, oregano, and thyme)
  • 1/2 teaspoon red pepper flakes (if you like spicy olives then use more pepper flakes)
  • 1 tablespoon lemon zest, cut into slivers
  • 2 cloves garlic, slivered

How to Make

  • Step 1: Rinse olives in ice-cold water to remove brine. Pat dry.

  • Step 2: In large glass container combine vodka with all remaining ingredients. Add in olives and toss to coat in the marinade. Cover with a tight-fitting lid and refrigerate for 2 days for flavours to develop. Tossing as many times as you can during the chilling time.

  • Step 3: Marinated olives will keep for a week or so packed with the marinade in a container and stored in the refrigerator.
