Step 1: Preheat oven to 350 F and grease & flour two 9x5" loaf pans.
Step 2: Combine all ingredients except for the nuts in a mixing bowl; blend together using an electric mixer for 4 minutes (use a timer).
Step 3: If you are using nuts, add just 1/2 cup of the nuts to the batter and stir to blend.
Step 4: Pour batter evenly into the two pans.
Step 5: Sprinkle the remaining nuts evenly over the entire surface of each pan.
Step 6: Bake for about 50-55 minutes or until a toothpick tests clean.
Step 7: Let cool 10 minutes in pan, them remove to wire racks to cool completely before slicing.
