Ingredients

The ingredients are:
  • 1 box (18.25 ounce) yellow cake mix (or butter cake mix 18.25 ounces, 2 layer size)
  • 1 box (4 serving size) instant vanilla pudding mix
  • 4 eggs, large
  • 1/4 cup oil (canola oil)
  • 3 cups squash (yellow crookneck squash, grated)
  • 1 teaspoon ground cinnamon (or apple spice spice blend)
  • 1/2 teaspoon salt
  • 1 to 1 1/2 cups walnuts (chopped divided, optional)

How to Make

  • Step 1: Preheat oven to 350 F and grease & flour two 9x5" loaf pans.

  • Step 2: Combine all ingredients except for the nuts in a mixing bowl; blend together using an electric mixer for 4 minutes (use a timer).

  • Step 3: If you are using nuts, add just 1/2 cup of the nuts to the batter and stir to blend.

  • Step 4: Pour batter evenly into the two pans.

  • Step 5: Sprinkle the remaining nuts evenly over the entire surface of each pan.

  • Step 6: Bake for about 50-55 minutes or until a toothpick tests clean.

  • Step 7: Let cool 10 minutes in pan, them remove to wire racks to cool completely before slicing.
