Ingredients

The ingredients are:
  • 3 pounds potatoes (8 new, 1 1/2 inch thick)
  • 1/2 cup water
  • Italian salad dressing (2 tablespoons, or any oil and vinegar type dressing)
  • 1/2 cup shredded mozzarella cheese (or cheddar, gouda…)
  • 4 slices bacon (cooked, crumbled)

How to Make

  • Step 1: Microwave potatoes and water in a 2 litre microwavable dish on HIGH for 10 minutes, or until tender.

  • Step 2: Cool 5 minutes and drain; place on work surface.

  • Step 3: Flatten the potatoes to 1/2 inch thick with a spatula.

  • Step 4: Heat the salad dressing in a large skillet on medium heat.

  • Step 5: Add potatoes; cook 4 minutes or until bottoms are golden brown.

  • Step 6: Turn; top with cheese and bacon.

  • Step 7: Cover and cook 2 minutes or until cheese is melted
