Ingredients

The ingredients are:
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 tablespoons fresh ginger, minced
  • 1 1/2 teaspooons garam masala
  • 1 clove garlic, minced
  • 4 cups water
  • 2 cups green lentils (washed and picked clean)
  • 1 pound sweet potatoes (peeled and cut into 1/2 inch cubes)
  • 1 (14 1/2) ounce can of diced tomatoes
  • 14 ounces vegetable broth
  • 1/2 teaspoon salt
  • 1 (9 ounce) bag fresh spinach or one 10 ounce package frozen spinach, thawed and squished dry

How to Make

  • Step 1: Heat oil over medium heat in a 6 quart pan until hot

  • Step 2: Add chopped onion and cook 8 - 10 minutes until tender and lightly browned

  • Step 3: Stir in minced ginger, garam masala and minced garlic and cook for 1 minute until fragrant

  • Step 4: Add water, lentils, sweet potatoes, diced tomatoes and salt and bring to a boil. When boiling lower heat to low and simmer covered for 25 minutes until lentils and potatoes are tender. Stirring occasionally

  • Step 5: Add spinach and heat through. Serve as a side dish or a main dish.
