Step 1: Melt butter in a medium saucepan over moderate heat Add in onion; saute for 2-3 minutes or until softened. Ad in garlic; saute for 1 minute. Add in vodka and dried hot pepper flakes; simmer for 2 minutes. Add pureed tomatoes and cream and simmer for 35-45 minutee over low heat. Season with salt and pepper to your liking.
Step 2: Towards the end of cooking your sauce, cook pasta until firm-tender; pour into the sauce and toss. Reduce heat to low, add the cheese and mix thoroughly. Pour into a heated bowl and serve at once.
