Ingredients

The ingredients are:
  • 1 small lemon
  • 1 small onion, finely chopped
  • 1 large garlic clove, minced
  • 2 to 3 tablespoons olive oil
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup cooked long grain rice
  • 2 cups frozen chopped spinach, thawed and drained (hand-squeeze out excess moisture)
  • 1/4 freshly grated Parmesan cheese
  • 1 large egg white
  • Seasoned salt and fresh ground black pepper, to taste
  • 6 to 8 (4 ounce) fresh sole fillets (or any thin fish fillets will work)

How to Make

  • Step 1: Preheat oven to 400 degrees F. Grease an 11 x 7-inch baking dish. Squeeze the lemon juice from the lemon into the pan; set aside.

  • Step 2: In a small skillet saute onion in oil for about 3 minutes. Add in garlic; saute for 2 minutes. Transfer to a bowl and cool mixture slightly. Mix in mozzarella cheese, cooked rice, spinach, Parmesan cheese and egg white, then season with salt and pepper.

  • Step 3: Spread about 1/4 cup spinach mixture onto each fillet strip. Roll to enclose filling. Secure with toothpick.

  • Step 4: Place cut side down over lemon juice in baking dish; cover with foil. Bake(400 degrees F) for 22-25 minutes or until fish flakes easily with fork.
