Step 1: Preheat oven to 400 degrees F. Grease an 11 x 7-inch baking dish. Squeeze the lemon juice from the lemon into the pan; set aside.
Step 2: In a small skillet saute onion in oil for about 3 minutes. Add in garlic; saute for 2 minutes. Transfer to a bowl and cool mixture slightly. Mix in mozzarella cheese, cooked rice, spinach, Parmesan cheese and egg white, then season with salt and pepper.
Step 3: Spread about 1/4 cup spinach mixture onto each fillet strip. Roll to enclose filling. Secure with toothpick.
Step 4: Place cut side down over lemon juice in baking dish; cover with foil. Bake(400 degrees F) for 22-25 minutes or until fish flakes easily with fork.
