Ingredients

The ingredients are:
  • 3 pounds potatoes (about 8-9 medium, I like red potatoes for this)
  • 1 (16 ounce) package Velveeta process cheese, cubed
  • 1 small onion, chopped
  • 2 garlic cloves, finely minced
  • 1 1/2 cups mayonnaise
  • 2 cups finely chopped cooked ham (I don't measure I just throw in a couple handfuls)
  • Salt and pepper
  • 1 cup grated old cheddar cheese

How to Make

  • Step 1: Cook potatoes in boiling salted water until tender. Drain and cool. Slice the the potatoes in 1-inch cubes. Combine cubed potatoes with Velveeta cheese, onion, garlic, mayonnaise and ham in a large bowl. Season with salt and pepper.

  • Step 2: Spoon into a 13-in. x 9-in. baking dish. Bake, uncovered at 350° for 50 minutes or until the top begins to brown. Sprinkle the cheddar cheese over the top. Place back in oven for 5-10 minutes until the cheese melts.
