Ingredients

The ingredients are:
  • 2 large eggs, lightly beaten
  • 1 cup panko (Japanese-style drybread crumbs)
  • 1/2 cup light milk
  • 4 large garlic cloves, minced
  • Finely shredded zest of 1/2 lemon
  • 2 tablespoons chopped fresh mint leaves
  • 3 tablespoon chopped fresh flat-leaf parsley
  • 1 teaspoon salt ( I use seasoned salt)
  • 1 teaspoon freshly ground black pepper
  • 1 pound ground lamb

How to Make

  • Step 1: In a large bowl,combine eggs with panko, milk, garlic, lemon zest, mint, parsley, salt, and pepper and let sit a few minutes for crumbs to soften. Add lamb, breaking up with your fingers, and mix well with your hands. Cover and refrigerate for 24-48 hours.

  • Step 2: Using slightly moist or oiled hands form meat mixture into 1-inch balls and set on greased baking sheet. Bake 350 degrees F for about 25 minutes or until browned
