Step 1: Heat oil in an electric skillet or deep-fat fryer to 375 degrees.
Step 2: In a large bowl combine the mashed potatoes with sugar, egg, sour cream and vanilla. In another bowl combine the flour with next 4 dry ingredients; using a wooden spoon stir in potato mixture.
Step 3: Drop batter by heaping teaspoonfuls a few at a time into hot oil. Fry until golden brown on both sides. Drain on paper towels; coat in confectioners sugar while warm.
