Step 1: Preheat griddle to high.
Step 2: Brush oil on one side of tortilla. Place on a plate oil-side-down. Spread 1/2 tablespoon mustard on tortilla.
Step 3: Top with green onion, apple slices, and 1/2 cup shredded gouda.
Step 4: Place second tortilla on top. Brush with olive oil.
Step 5: Repeat. Stacking quesadillas on a plate.
Step 6: Brush grill with oil. Put quesadillas on griddle. Cook 3 minutes or until crispy. Flip and grill other side for 3 minutes or until crispy.
Step 7: Cut into quarters. Serve hot with topping of your choice.
