Ingredients

The ingredients are:
  • 1 to 2 ounces quality black caviar
  • 8 ounces sea scallops
  • 1/2 meyer lemon, juiced (or any fresh lemon), you can add more or less to taste
  • 2 teaspoons fresh chives, minced
  • 1/8 teaspoon pink peppercorns, freshly ground
  • Sea salt to taste
  • Garnish: chives, micro greens (optional)

How to Make

  • Step 1: Scallops ... Slice the scallops horizontally in 2-3 pieces; then dice. You want fairly small equal bite size pieces. Add the scallops to a small bowl along with the lemon juice, chives, peppercorns, and salt. Make sure to adjust the amount of lemon and salt to your taste. Mix so all the scallops are coated with the lemon juice and cover with plastic wrap. Let the scallops marinate 30-45 minutes NO longer. I prefer 30 minutes for the best taste. Note: Pink peppercorns have a milder taste and work much better with seafood.

  • Step 2: Serve ... This is best using a 1-1/2" cookie or biscuit cutter. I like to add some micro greens to your plate and then set the round biscuit or cookie cutter on top of the greens. Spoon the scallop mixture into the round pressing down lightly to form your small mold. Remove the shape, then top with a spoon of the caviar and a small piece of the chives. If you don't want to use a cookie cutter, you use a small scoop too. The cookie or biscuit cutter just makes a pretty presentation. ENJOY!
