The ingredients are:
  • 2 cups sliced zucchini (1 medium, halved lengthwise and then sliced)
  • 2 cups sliced summer squash (1 medium, halved lengthwise and then sliced)
  • 1 cup sliced mushrooms, fresh
  • 8 green onions (sliced, with tops)
  • 2 tablespoons oil (extra virgin olive oil)
  • 1 tablespoon Italian seasoning (I used an Italian-Romano blend from my farmer's market)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper (fresh-grated)
  • 1/2 cup crumbled feta cheese

How to Make

  • Step 1: Layer the zucchini, summer squash, mushrooms and onion in a glass casserole dish.

  • Step 2: Drizzle olive oil over the top; sprinkle with Italian seasoning.

  • Step 3: Microwave on high, covered, for 6 minutes.

  • Step 4: Sprinkle feta cheese over top of casserole; microwave, uncovered, an additional 2 minutes.
