  • 1 cup sliced fresh mushrooms
  • 1 small yellow onion (chopped)
  • 2 teaspoon oil (or as you want)
  • 1 tablespoon Cajun seasoning (no-salt)
  • 10 ounces turkey sausage
  • 2 cloves garlic, minced
  • 1 cup dry rice
  • 4 cups low-sodium chicken broth
  • 1 can (15 ounce) black beans, drained (optional)
  • Salt and pepper

How to Make

  • Step 1: Heat oil in a large nonstick skillet over medium high heat: add in mushrooms, onion, Cajun seasoning sausage and garlic. Saute around 8 minutes or until the sausage is thoroughly cooked.

  • Step 2: Add rice to pan. Stir in broth and beans. Add salt and pepper Bring mixture to a boil, cover, reduce heat and simmer until rice is tender.
