Step 1: Corn ... Clean the corn well, you don't want any of those nasty silks floating around in your corn dish. Cut the corn off the cob and add to a medium pot. Take one of the cobs and break it in 3 pieces, and add that as well to the pot. It adds extra flavor and more starch to the dish. Add the cream and bring to a boil. Then reduce to a simmer and cook at least 10 minutes up to 15, until the cream has thickened and the corn is tender; it will still have a bit of a bite to it, but tender, which is what you want.
Step 2: Finish ... Depending on the sweetness of your corn, you can add a pinch of sugar to sweeten it up if you like. Also, finish with the butter, salt, and pepper. 1 1/2 tablespoons of butter is plenty to me, but some people like more. That is a personal taste. Remove the corn cobs and cook another 3-5 minutes, to reduce just a bit more.
Step 3: Serve and ENJOY! It goes with just about anything. It really is so easy. I often serve the garnishes on the table so everyone can garnish it the way they like it.
