The ingredients are:
  • 3/4 cup granulated sugar
  • 1/3 cup unsalted butter (at room temp)
  • 2 large eggs (at room temp)
  • 3 egg yolks (at room temp)
  • 1/8 teaspoon salt
  • 2/3 cup lemon juice (meyer, or regular lemon juice)

How to Make

  • Step 1: Beat sugar with butter, eggs, yolks and salt in a medium saucepan, with an electric mixer on medium high until creamy, about 1 minute.

  • Step 2: Beat in lemon juice (mixture may curdle but will smooth out during cooking)

  • Step 3: Set saucepan over medium-high.

  • Step 4: Cook, whisking constantly, until curd is thickened and smooth and coats the back of a spoon, 3 - 5 minutes.

  • Step 5: Serve warm or store in jars; refrigerate up to 5 days; or freeze for a wonderful gelato.
