Ingredients

The ingredients are:
  • 4 ounces cream cheese (softened)
  • 1/3 cup sour cream
  • 1/2 small jalapeno pepper, minced (seeds removed)
  • 2 green onions, chopped, divided
  • 1 can (14 ounce) refried beans
  • 1 red bell pepper (seeded then finely chopped)
  • 1 1/4 cups shredded cheddar cheese (sharp)
  • Tortilla chips
  • Salsa

How to Make

  • Step 1: Preheat broiler. Grease an 8 inch glass baking dish. In bowl using wooden spoon, stir cream cheese until soft. Stir in sour cream, jalapenos and 1 chopped green onion. With a whisk, beat until smooth.

  • Step 2: Spread evenly over bottom of baking dish. Dollop refried beans evenly over surface; spread evenly with back of spoon. Sprinkle with bell pepper, then shredded old cheddar cheese.

  • Step 3: Place baking dish in top third of oven. Broil for 4 to 6 minutes or until golden and bubbly. Top with remaining green onion. Serve immediately with tortilla chips and salsa.
