  • 2 1/2 cups granulated sugar
  • 1 1/4 cups water
  • 9 pasteurized egg whites
  • 2 cups butter, softened and CREAMED
  • Pinch salt (omit if using salted butter)

How to Make

  • Step 1: In medium saucepan, dissolve sugar in water over medium heat. Remove from heat.

  • Step 2: In large bowl, beat egg whites with electric mixer until soft peaks form. With mixer running, slowly drizzle sugar syrup down side of mixing bowl; continue to beat until egg whites are stiff.

  • Step 3: Gradually add creamed butter, a little at a time, continuing to beat; beat until icing is smooth.
