Ingredients

The ingredients are:
  • 2 cups bran cereal (All-Bran or 100% bran)
  • 1 1/2 cups shredded carrot
  • 1 cup milk
  • 3/4 cup crushed pineapple, well drained
  • 1/2 cup plain low-fat yougury (not fat-free)
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/2 cup liquid honey

How to Make

  • Step 1: Preheat oven to 375°F. Line a 13 x 9-inch metal baking pan with foil, leaving a 2-inch overhang at each end. Lightly butter foil.

  • Step 2: In a bowl, combine bran cereal, carrot, milk, pineapple and yogourt; let stand for 5 minutes In a large bowl, combine flour, baking powder, cinnamon, baking soda and salt. Whisk egg and honey into Milk mixture. Pour over dry ingredients and stir just until moistened.

  • Step 3: Spread into prepared pan, smoothing top. Bake for about 30 minutes or until a tester inserted in centre comes out clean. Let cool completely in pan on rack.

  • Step 4: Using foil overhang as handles, remove from pan and cut into bars.
