Ingredients

The ingredients are:
  • 1 cup sugar (I used white, but want to try brown or half and half)
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1 large egg
  • 2 pounds tart apples, peeled and quartered and cut into 1/4-inch slices (I chopped mine)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons fresh mint, minced
  • 2 to 4tablespoons orange juice or apple juice, to moisten filling (optional, my addition)
  • 1/2 teaspoon orange zest (optional, my addition)
  • Vanilla ice cream or whipped cream, to serve

How to Make

  • Step 1: Preheat oven to 350F. Butter sides and bottom of an 8-inch baking dish. I used a ceramic tart dish.

  • Step 2: In a small bowl, whisk together: sugar, flour, and baking powder.

  • Step 3: Make a well in the center and drop in the egg. Mix together with 2 knives or a pastry cutter until the flour has absorbed the egg.

  • Step 4: Stir together mint and cinnamon. Add apples and toss until the apples are well coated.

  • Step 5: Optional: to add some juice and zest to the apple mixture and toss.

  • Step 6: Arrange apple slices in buttered baking dish.

  • Step 7: Scatter flour mixture over the top of the apples, pressing gently into a smooth layer to cover apples completely.

  • Step 8: Bake for 45-60 minutes.

  • Step 9: Serve at room temperature with ice cream or whipped cream.
