Ingredients

The ingredients are:
  • 1 pound pork tenderloin, trimed of fat
  • 1/2 teaspoon Seasoned salt
  • 1/2 cup apricot jam, the chunky type is best
  • 2 tablespoons apple cidar vinegar
  • 1 tablespoon liquid honey
  • 1 tablespoon soy sauce, low sodium type
  • 2 teaspoons fresh ginger, finely grated (or 1/2 teaspoon ground ginger)
  • 1/4 teaspoon garlic powder

How to Make

  • Step 1: Preheat oven to 475f degrees. Place tenderloin on greased wire rack set on a foil lined baking sheet. Spray with cooking spray, sprinkle all over with season salt. Roast on centre oven rack for 20 minutes.

  • Step 2: While the tenderloin is cooking, combine the remaining 6 ingredients in a small saucepan. Bring to a boil, simmer, uncovered for about 7 minutes, sirring occasionally until thickened. Measure about 3 tablespoons of jam mixture into a small cup and brush over pork. Reserve remaining jam mixture. Roast pork a further 5 minutes until meat thermometer inserted into thickest part of tenderloin reaches 155f; transfer to serving dish and cover with foil. Let stand for 10 minutes before carving.

  • Step 3: Internal temperature should rise to 160f. Serve with reserved jam mixture.
