Ingredients

The ingredients are:
  • 2 1/4 cups all-purpose flour (more for dusting baking sheet)
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup shredded Gouda cheese
  • 1 cup buttermilk
  • 3/4 cup mashed potatoes, not hot
  • 1 egg yolk

How to Make

  • Step 1: Dust a large baking sheet generously with all-purpose flour; set aside.

  • Step 2: In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. With pastry blender, cut in butter until crumbly, with a few larger pieces. Sprinkle with 1/2 cup of the gouda cheese.

  • Step 3: In a separate bowl, whisk buttermilk with potatoes until smooth; pour over dry ingredients. With fork, toss together until soft ragged dough forms. Turn out onto floured surface; knead 3 or 4 times until dough holds together.

  • Step 4: Pat out into 9 x 6-inch rectangle. Cut lengthwise in half; cut crosswise in sixths to make 12 finger-shaped biscuits.

  • Step 5: Arrange on prepared pan, Brush with egg yolk; sprinkle with remaining cheese. Bake in centre of preheated 400°F oven until golden, about 18 minutes.
