  • 3 cups oats (quick)
  • 2 cups buttermilk
  • 2 large eggs
  • 2/3 cup oil (vegetable oil)
  • 1 1/2 cups packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 to 3/4 cup semi-sweet chocolate chips (mini)

How to Make

  • Step 1: Preheat oven to 350 F.

  • Step 2: In a bowl combine mashed bananas with oatmeal, buttermilk, eggs, oil, brown sugar, and vanilla. Mix well.

  • Step 3: In the second bowl combine whole wheat flour and next 4 dry ingredients.

  • Step 4: Add to banana mixture, stirring until thoroughly blended. Batter will be thin.

  • Step 5: Spoon into greased muffin cups. Bake for 20-25 minutes, or until set and golden.
