Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 4 large cloves garlic (finely minced)
  • 1 (28 ounce) can diced tomatoes, with juice
  • 1 tablespoon brown sugar
  • 1 tablespoon chili powder (or more)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon cinnamon
  • 1/2 to 1 teaspoon hot red pepper flakes
  • 1 green bell pepper, chopped (seeds removed)
  • Salt & pepper

How to Make

  • Step 1: Heat oil in a large saucepan medium-high heat. Add onions and garlic and stir for 4 minutes. Add juice from can of tomatoes (reserve tomatoes). Sprinkle with sugar and seasonings. Stir often, uncovered until most of the liquid has evaporated, about 10-15 minutes.

  • Step 2: When there is very little liquid left, stir in green pepper and diced tomatoes. Reduce heat to medium and boil gently, uncovered and stirring often, to blend flavours and thicken about 20 minutes. Add salt and pepper. Serve right away or cover and refrigerate up to 5 days.
