Ingredients

The ingredients are:
  • FOR SALAD
  • 3 cans (45 ounces) garbanzo beans (each can 15 ounce each, chick peas or 4 1/2 cups approximately chick peas, drained and rinsed, or 1 3/4 cups dry, if you plan to cook your own)
  • 1 red onion, diced
  • 3 tomatoes, whole (medium tomatoes, seeded and diced)
  • 1 red bell pepper, cut in thin strips
  • 1 small yellow bell pepper, cut in thin strips
  • 5 scallions, cut lengthwise and then in 1/2" pieces on an angle (white and green parts)
  • 1 cup parsley, chopped
  • 2 to 3 tablespoons mint, chopped
  • Salt & pepper
  • FOR DRESSING
  • 1/4 cup olive oil
  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons water

How to Make

  • Step 1: Dressing ... Add all the ingredients to a small bowl and mix well. Cover with plastic wrap and refrigerate until ready to use.

  • Step 2: Salad ... Add everything to a serving bowl and toss to combine. Then, add the dressing - not quite all of it. I tend to dress my salads a bit lighter, so add most of the dressing and mix to combine. You can always add more, but you can't take any away. Let the salad rest at least 30 minutes before serving. At that time, you can add the rest of the dressing if you want.
