Ingredients

The ingredients are:
  • 1 large cucumber, fine chopped (peeled and seeded)
  • 1 large shallot, fine chopped
  • 1 clove garlic, minced
  • 1 tablespoon honey
  • 2 tablespoons fresh lime juice
  • 1/2 cup olive oil
  • Pinch red pepper flakes
  • 1/2 teaspoon coriander
  • Pepper to taste
  • 1/4 teaspoon salt

How to Make

  • Step 1: Cucumber ... Peel the cucumber in half and cut lengthwise, then use a spoon and scoop out the seeds. Fine chop, add to a colander, and lightly salt. Make sure to stir the cucumber so the salt gets mixed in. Then, let the cucumber rest 10 minutes in the colander over a bowl, so it can drain. As the cucumber rests, make the dressing.

  • Step 2: Dressing ... In a small bowl, add the shallot, garlic, honey, lime juice, olive oil, red pepper flakes, coriander, and a pinch of pepper. Using a whisk, mix until all the ingredients are combined.

  • Step 3: Finish and Serve ... Add the cucumber to the dressing and toss to combine. There is no need to add salt, but you may want to season with a little additional pepper, that's up to you. Top your favorite grilled fish or chicken and ENJOY! This has tons of flavor and easy to make.
