Step 1: Marinate ... Add all the ingredients to a large ziploc bag or non-reactive (glass) bowl and mix well. Make sure to grate the shallot over the bowl or bag to get all the juice. Reserve 1/3 of the marinade to use as a glaze as you grill the chicken. Add the chicken to the marinade and mix well to cover all the chicken pieces. Close up the ziploc bag or cover the bowl with plastic wrap. Also cover the reserved marinade as well. Marinate at least 8 hours, overnight is best.
Step 2: Grill ... Remove the chicken from the marinade, season with pepper on all sides, and let them come to room temp to take the chill off. Add the chicken to the grill and cook on medium heat, turning and brushing every 10 minutes with the reserved marinade. Don't try to rush cooking the chicken. Cooking times will vary depending on the size of your chicken legs, and the type of grill. If you are not sure, use a meat thermometer.
Step 3: Serve ... ENJOY! with anything you want. This is such a nice marinade, it really goes well with just about anything.
