  • The following recipe serves 4-8 people.

Ingredients

The ingredients are:
  • 1 cup roast turkey (pick up some right from the deli and dice it yourself)
  • 1 cup cooked ditalini pasta (more or less to taste)
  • 1 head boston lettuce
  • 1 1 /2 romaine hearts
  • 1/2 cup pea shoots, or alfalfa sprouts
  • 1/2 cucumber, cut in half lengthwise, seeded
  • 4 scallions (white and green parts)
  • 1/2 cup celery, cut lengthwise and on an angle
  • 1/4 cup loosely packed basil leaves, torn1/4 cup kalamata olives (you can substitute black), cut in half
  • 1/2 cup walnuts, toasted and chopped
  • 1 lemon, cut in wedges
  • Dressing:
  • 6 tablespoons olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • Pinch salt, to taste
  • Pinch pepper, to taste
  • Garnish: Feta cheese (optional)

How to Make

  • Step 1: First, this is a chopped salad; so, everything should be small 'diced or chopped' in similar size pieces.

  • Step 2: Pasta ... Cook the pasta according to package directions in plenty of salted water. This is a small amount of pasta, so you want need a very large pot. Once the pasta is done, drain and immediately rinse with cold water. Set to the side.

  • Step 3: Dressing ... Add all the ingredients to a small tupperware container or small cup and mix well. Refrigerate until ready to use.

  • Step 4: Walnuts ... I like to toast the walnuts, but it isn't necessary. Simply add them to a dry non-stick saute pan and cook on medium heat 2-3 minutes until you can begin to smell the nuts and they are lightly toasted. Set off to the side to cool.

  • Step 5: Salad ... In a large bowl, add the greens, cucumber, turkey, pasta, scallions, celery, basil, olives, and season lightly with salt and pepper; toss well to combine. Add in the sprouts and half of the dressing and toss lightly. You may have some extra dressing, but I always start out with less, you can always add more.

  • Step 6: Finish and Serve ... Serve family style, extra dressing can be poured over the top (depending on how heavy you like to dress your salad), and garnish with Feta, walnuts and fresh lemon wedges. I love to squeeze a couple over the salad when serving. ENJOY! A nice dinner roll or homemade bread would be perfect with this hearty salad.
