Step 1: In a bowl, mix together cornmeal, flour, salt, cayenne pepper, baking soda and baking powder. In another bowl, mix together egg and milk. Using a fine grater grate the onion over and into the milk mixture.
Step 2: Pour milk mixture into the dry ingredients and whisk, coming up with a pancake batter-like texture.
Step 3: Mix in grated mozzarella cheese and crumbled blue cheese.
Step 4: Drop batter by the tablespoon into hot oil. Fry until golden.
