Ingredients

The ingredients are:
  • 1 3/4 cups, 1 can (15 oz) Libby pure pumpkin
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 cup pecans, chopped
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg, beaten
  • 1 cup butter,softened
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Orange Glaze:
  • 1 1/2 cups powdered sugar
  • 2 to 3 tablespoons orange juice
  • 1 teaspoon orange zest

How to Make

  • Step 1: Batter ... First, add the flour, baking soda, and salt together in a small bowl and mix well to combine. Then, add the butter and sugar to a larger bowl and beat with a mixer until creamy. You can do this by hand if you don't have a mixer, it just takes a bit of work. Once the butter and sugars are creamy, add the eggs, pumpkin, orange juice and zest, and mix again to combine. Then, slowly add the flour mix, a little at a time, until everything is mixed through. Stir in the nuts by hand.

  • Step 2: Cookies ... I like to bake on parchment paper, but you could also use a silpat. But, it is not necessary to grease the pan. Drop the cookie dough using a tablespoon onto the baking sheet.

  • Step 3: Bake ... Preheat the oven to 375 degrees. Bake the cookies on the middle rack for 12-14 minutes until the edges are set, and the cookies are golden golden brown. Remove to a cooling rack.

  • Step 4: Glaze ... Add the powdered sugar, orange juice and zest to a small bowl and mix until smooth. Drizzle over the cooled cookies. ENJOY!
