  • The following recipe serves 2 people.

Ingredients

The ingredients are:
  • 1 cup uncooked elbow macaroni
  • 2 bacon strips, chopped ( I used 4 slices )
  • 1/4 cup chopped onion
  • 1/4 cup sliced fresh mushrooms
  • 1 1/2 tablespoon butter ( original recipe called for 1 1/2 teaspoons )
  • 1 tablespoon all-purpose flour
  • 1/4 cup + 2 tablesppons chicken broth
  • 1/4 cup + 2 tablespoons 2% milk ( I used whole milk and it worked fine )
  • 3/4 cup shredded pepper jack cheese (I used slices cut into thin strips, and then measured. It worked very well. )
  • 1/4 teaspoon Italian Seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

How to Make

  • Step 1: Cook the pasta according to the package directions,drain and set aside.

  • Step 2: In medium sized skillet,cook bacon until crisp remove with slotted spoon to drain on paper towels.Save 3/4 teaspoon of bacon grease.

  • Step 3: In the same skillet,add butter,onions,and mushrooms.Cook until tender.

  • Step 4: Stir in flour until well blended,slowly add milk and chicken broth.

  • Step 5: Bring to a boil and stir for 1 to 2 minutes or until slightly thickened.

  • Step 6: Add the cheese,Italian Seasoning,salt,and pepper.cook over medium heat until cheese is melted

  • Step 7: Add pasta and bacon pieces to sauce mixture, stirring well. Serve and ENJOY !!!
