Step 1: Chicken and Vegetables ... Add the chicken pieces, onion, peppers, celery, carrots, garlic, and tomatoes to the crock pot and mix to combine.
Step 2: Sauce ... In a bowl, add the tomato paste, broth, wine, seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper and mix well. Pour over the chicken and vegetables and mix to make sure everything is coated in the sauce. Add the bay leaf, and push it down in the sauce. Finish by adding the mushroom and olive on top, but do not mix in.
Step 3: Cook ... Cover, and cook on low heat for 6-7 hours. Please remember all crock pots cook differently. I use my oval crock pot, and 6 hrs is usually the time it takes; but just be aware of that. About 30 minutes before serving. Stir everything together - especially those mushrooms and olives which started out on top; and check for any additional seasoning (salt and pepper). Cover and cook another 15-30 minutes. This will give you time to make some rice or pasta to serve with the chicken.
Step 4: Serve ... Stir in the parsley right before serving and serve over rice or pasta. As I said, I like yellow rice; but pasta is equally as good. Make a salad and ENJOY!
