Ingredients

The ingredients are:
  • 3 pounds bone in skinless chicken thighs, use can also use a mix of breasts and thighs (but cut the breasts in a couple of pieces)
  • 1 medium onion, cut in half and sliced
  • 1 large green bell pepper, diced (not too fine)
  • 1 small yellow bell pepper, diced (not too fine), you could also use a red pepper if you can't find yellow
  • 1 cup white (button) mushrooms, sliced
  • 1 large celery rib, diced (include the leaves if possible)
  • 1/4 cup carrot, very fine chopped
  • 4 garlic cloves, minced
  • 1(15 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1/3 cup black olives, whole
  • 1 cup chicken broth
  • 1/2 cup red wine
  • 1/4 cup parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1 bay leaf
  • Salt and pepper to taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Chicken and Vegetables ... Add the chicken pieces, onion, peppers, celery, carrots, garlic, and tomatoes to the crock pot and mix to combine.

  • Step 2: Sauce ... In a bowl, add the tomato paste, broth, wine, seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper and mix well. Pour over the chicken and vegetables and mix to make sure everything is coated in the sauce. Add the bay leaf, and push it down in the sauce. Finish by adding the mushroom and olive on top, but do not mix in.

  • Step 3: Cook ... Cover, and cook on low heat for 6-7 hours. Please remember all crock pots cook differently. I use my oval crock pot, and 6 hrs is usually the time it takes; but just be aware of that. About 30 minutes before serving. Stir everything together - especially those mushrooms and olives which started out on top; and check for any additional seasoning (salt and pepper). Cover and cook another 15-30 minutes. This will give you time to make some rice or pasta to serve with the chicken.

  • Step 4: Serve ... Stir in the parsley right before serving and serve over rice or pasta. As I said, I like yellow rice; but pasta is equally as good. Make a salad and ENJOY!
