  • 3 baked Yukon Gold or russet potatoes, baked and peeled
  • 1 small sweet potato, baked then peeled
  • 2 tablespoon butter
  • 1/3 cup light cream
  • 3/4 cup shredded cheddar cheese, divided
  • 1 green onion, chopped finely
  • Salt and pepper

How to Make

  • Step 1: Peel the white and sweet potatoes. Place in a bowl then coarsely mash with a fork. Add the butter and cream and mash until smooth. Mix 1/2 cup cheese and and onion. Season with salt and pepper.

  • Step 2: Spoon the mixture on top of the Shepherd's pie. Sprinkle 1/4 cup shredded cheese over top. Bake until golden browned.
