Ingredients

The ingredients are:
  • 2 corn tortillas, cut into 2" X 1/2" strips
  • 1/3 cup onion, chopped
  • 1/4 cup Jalapeno peppers, finely chopped
  • 6 cups low sodium chicken broth
  • 1 cup cooked chicken, shredded
  • 1 large tomato, chopped
  • 2 tablespoons fresh lime juice
  • 1/4 cup cilantro. chopped (optional)
  • Salt and pepper to taste
  • 4 slices lime, for garnish

How to Make

  • Step 1: Lightly spray a skillet with oil and fry the tortilla strips until golden, drain on paper towel - about 5 minutes

  • Step 2: Add broth, onion, jalapenos and chicken to a pot and bring to aboil, turn heat down, cover and simmer for 20 minutes

  • Step 3: Add tomato and simmer 5 more minutes, add lime juice and cilantro

  • Step 4: Season with salt and pepper, ladle into bowls add tortilla strips and float a slice of lime in each bowl
