Ingredients

The ingredients are:
  • 12 ounces sauerkraut, drained (2 cans)
  • 3/4 cup sour cream
  • 1/2 cup thousand island dressing
  • 1 teaspoon caraway seeds
  • 1 onion, chopped
  • 24 ounces corned beef (2 cans)
  • 12 ounces Swiss cheese, sliced or shredded
  • 10 slices hearty rye bread, cut into 1 inch squares
  • 2 sticks butter, melted (1 cup)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Mix drained sauerkraut, onion, sour cream, 1000 island dressing and caraway seeds. Spread in the bottom of a 9 x 13 inch baking dish that has been treated with non-stick cooking spray.

  • Step 3: Top with crumbled corned beef, spreading to edges. Then top with Swiss cheese.

  • Step 4: Drizzle melted butter over bread cubes and top the corned beef mixture.

  • Step 5: Place in center of preheated 350 degree F. oven and bake for 35-45 minutes, or until bread cubes are golden brown and toasty. Enjoy with a nice tossed salad.

  • Note: to make 1000 island dressing instead of buying a bottle, just mix 4 parts mayonnaise, 1 part ketchup and 1 part sweet relish.
