  • The following recipe serves 5 people.

Ingredients

The ingredients are:
  • 1/2 cup olive oil
  • 1 tablespoon white wine vinegar (use red wine vinegar if marinating beef)
  • 2 tablespoons white wine (red wine if marinating beef)
  • 1/2 cup mixed fresh herbs, such as oregano, thyme, savory, sage, parsley, and rosemary (all rough chopped)
  • 2 small garlic cloves, rough chopped
  • 2 scallions, rough chopped (white and green parts)
  • 1 large shallot, rough chopped
  • 1 tablespoon fresh lemon juice (lime or orange can be substituted as well. Orange is great with pork and lime with seafood)
  • 1/2 lemon zested (if using orange or lime, use the zest of that fruit)
  • 8 peppercorns, crushed
  • Pinch red pepper flakes
  • 1/4 teaspoon kosher salt

How to Make

  • Step 1: Marinade ... Add everything to a small food processor and pulse several times until everything is well blended and creamy. Add to a small bowl or ziploc bag - add the protein to be marinated and refrigerate.

  • Step 2: Then grill and ENJOY! This will marinade approximately 4-6 steaks, chicken, or pork; and 1 lb shrimp, scallops or fish.
