Ingredients

The ingredients are:
  • 12 slices of honey baked deli sliced turkey
  • 8 slices of pumpernickel bread, sliced (not too thin; I prefer to slice my own ... or just ask the bakery guy to slice it thick - they will be glad to do so)
  • 1 medium onion, cut in quarters and thin sliced
  • 1 pear (Bosc, or a firm pear), diced
  • 1 apple (fuji or a firm apple), diced
  • 3 tablespoons cranberry sauce
  • 4 to 8 slices sharp cheddar cheese (1-2 depending on the size, per sandwich)
  • 2 1/2 teaspoons butter (divided, 2 for the sandwich; 1/2 for the saute
  • Salt and pepper

How to Make

  • Step 1: Onions and Fruit ... In a small non-stick pan, add the butter (1/2 teaspoon) and bring to medium heat. Add the onions, apples and pears and saute until tender. Season lightly with salt and pepper. You want them tender, but still crisp.

  • Step 2: Sandwich ... Add a light 'slather' of the cranberry sauce (not jelly) to the bread and top with the turkey, some of the sauteed onions, apples and pears, and a slice of the cheddar cheese; and, a little cranberry slather on the top slice of bread.

  • Step 3: Grill ... Spread a little butter on the top and place on the griddle/grill pan buttered slice down. Then, spread the top slice with a little butter and press down. I like to cover my sandwich as it cooks with the lid of a pot. It just heats up, melts and cooks a bit quicker. And, make sure the heat is on medium - too high of heat and the sandwich will brown too quickly before it warms up and the cheese melts.

  • Step 4: Serve ... Just ENJOY! Some chips, pickle or sweet potato salad would be fantastic.
